Pectina é um polissacarídeo estrutural da parede celular de vegetais, amplamente utilizado como agente geleificante, estabilizante e espessante na indústria de alimentos e cuja extração industrial é realizada por processos com ácidos como clorídrico e sulfúrico, os quais geram resíduos que necessitam de tratamento complexo. Bagaço de laranja e de outros citros são utilizados para a extração industrial de pectina, porém a maior parte do bagaço gerado pela indústria de suco de laranja é destinada à alimentação animal. Objetivando agregar valor a esse subproduto agroindustrial pela extração de pectina por métodos alternativos foi desenvolvida na Universidade Estadual de Londrina - UEL, com apoio financeiro do Conselho Nacional de Desenvolvimento Científico e Tecnológico - CNPq a dissertação de mestrado que deu origem a este livro.
